Lemon Ginger Chicken

Combine:

  • 1/2 Cup lemon juice
  • 2-3 Cloves garlic minced 
  • 1 Tsp minced ginger
  • 1/2 Tsp thyme
  • 1/4 Tsp salt
  • Pepper
  • 1 Tablespoon olive oil
  • Pour over 4-5 chicken breasts that have been placed in zip lock bag or a container that can be sealed.
  • Shake to coat chicken. 
  • Let it marinate in refrigerator for 20 minutes to all day. 
  • Bake at 350 degrees for 35-40 minutes. (I baked Brussel sprouts in the same pan with the chicken. It gives the Brussel sprouts a lemon, garlic lift.
  • Would be great grilled. 
  • Use leftovers with rice or quinoa for meal prep.
