Greek Side Salad

Ingredients: (dressing)
– 1 garlic clove or 1/2 tsp minced garlic
– 1 tsp dried oregano
– 1/2 tsp Italian Seasoning
– 1/2 tsp black pepper
– 1/4 cup fresh lemon juice
– 1/2 cup olive oil
– (Optional) 1 tsp fresh basil

Using a balls jar or sealable container; combine seasonings into jar. Then pour in the lemon juice followed by olive oil, cap the jar and shake to mix up ingredients. Store in refrigerator.

Ingredients: (salad)
– 1 cucumber
– 1 large tomato
– 1-2 bell peppers, any color
– 1/2 can black olives
– Spinach
– Feta cheese

Chop cucumber, tomato, peppers and olives into small to medium bite size chunks and combine into salad/mixing bowl. (For purpose of storing leftovers I don’t mix in the spinach, cheese or dressing)

In individual serving bowls, mix in desired amount of mixed vegetables and add spinach. Sprinkle small amount of Feta cheese on top and add 1.5-2 tbsp of refrigerated dressing.
