Chilli Glazed Salmon

Begin with:

  • 4 (4 ounce) Skin on salmon fillets 
  • 1 Tablespoon olive oil 

Glaze, mix together:

  • 2 Tablespoons honey
  • 1 Tablespoon Sriracha 
  • 1 Teaspoon lime juice
  • Preheat oven to 400 degrees.
  • Heat oil in ovenproof skillet, on medium heat.
  • Add salmon. Sear 2 minutes, flip and sear second side.
  • Brush salmon with glaze.
  • Transfer the salmon in skillet to oven.
  • Cook 6-8 minutes until done.
  • (Sear skin side first, flip. Skin peels right off) 

Cauliflower Mexican Rice:

  • 1 Tablespoon olive oil 
  • 1/2 Cup chopped onion
  • 1 Clove minced garlic
  • 1 Teaspoon each ground cumin & chili powder 
  • 2 Cups riced cauliflower 
  • 1 Cup diced fresh tomatoes 
  • 1/4 cup chopped fresh cilantro 
  • In large skillet, cook onion and garlic in oil 3 minutes.
  • Add cumin and chili powder, cook another 3 minutes.
  • Add riced cauliflower and tomatoes.
  • Saut√© 5-7 minutes until cauliflower is soft.
  • Stir in cilantro.
